Scooby Snacks

     Apparently there was some sort of contest to come up with a recipe for Scooby snacks. I have veganized it and they are actually pretty good.

Alterations: 

Use fair-trade cocoa
Butter becomes 1/4 cup + 2 Tbsp olive oil OR 1/2 C margarine.
Eggs become 1 Tbsp Ener-G egg replacer + 1/4 cup water.
Almond extract works fine in place of walnut extract.
You'll have to add a good bit of soy/rice/oat/almond milk.
Roll the flattened scooby snack shaped cookies in turbinado sugar.
The cookie sheet doesn't need to be greased.
