1 lb. extra-firm tofu (don't bother with Nasoya, find something firmer)
1/2 of a red bell pepper, chopped
1/2 of a very large onion, chopped
3-4 mushrooms, sliced
oil
1/4 tsp black pepper
2 Tbsp nutritional yeast
1/2 tsp basil
1/2 tsp oregano
1 tsp parsley
1/4 tsp turmeric
1/2 tsp salt, or to taste
In a large frying pan, sauté the onion in oil for a few minutes then add the mushrooms and pepper.
In a medium bowl, mash the tofu with a pastry cutter, leaving some small chunks. Place all of the spices etc. in a small bowl.
When the vegetables are soft, add the tofu and spices. Mix well and cook until some of the tofu is browned.
